Eating salads is a super convenient way to work in a couple of servings of vegetables or fruits. You can make a salad at home in five minutes only armed with a bag of salad greens, few veggies and some light salad dressing. Not only that, salads are cool, crunchy and fun to eat. Salads generally have high fibre which helps us maintain lower cholesterol levels and prevent constipation. Nutrient rich plants contribute to overall health. Studies have proved that eating salad enhances satiety and reduces total calories eaten during the meal. Eating salads appears to help the body absorb protective phytochemicals. Here are seven delicious recipes for salads, one for each day of the week !!

1. Monday – Chana Salad

Ingredients :
1 cup chopped carrots
1 cup chopped pumpkin
1 cup chopped beans
3/4 cup broccoli
3/4 cup capsicum
Pink salt and black pepper
1 cup cooked chole (chickpeas) / rajma / kala chana
1 chopped tomato
Mixed Herbs, dry mint and Lemon juice
1 cup curd (dahi)
Instructions :Take a heavy bottom steel pan
Add 2 tbsp water
Add 1 cup each carrots, pumpkin and beans
Cook these veggies in the pan for some time, don’t overcook. Make sure you maintain the crunchy ness
Add 3/4 cup each broccoli and capsicum
Add pink salt and black pepper to taste
Mix well
Add 1 cup cooked chole (chickpeas)
Mix well
Add 1 chopped tomato at the end to keep it juicy
Cover the pan and let it cook for 2 – 3 minutes
Switch off the gas
Add mixed herbs, dry mint and lemon juice

Your Chana salad is now ready !!

2. Tuesday – Marinated Soy salad

Ingredients :
Boiled soy chunks (water squeezed out and chopped)
Pink salt, cumin powder and black pepper powder
1 tsp virgin olive oil
Mixed herbs and dry mint
1 cup beaten curd
1 cup chopped beans
1 cup chopped carrots
1 cup chopped pumpkin
Dry mint and herbs
1 chopped tomato
Instructions : Take boiled soy chunks in a glass bowl
Add pink salt, cumin powder and plack pepper powder to taste
Add 1 tsp virgin olive oil in the bowl
Add mixed herbs and dry mint
Add 1 cup beated curd
Keep the mixer in fridge to marinate for 30 minutes to 3 hours
Take 2 tbsp water in a pan
Add 1 cup each chopped beans, carrots and pumpkin
Cook to make the mixture crunchy
Add dry mint, herbs, salt and black pepper to taste
Add 1 chopped tomato
Let the veggies cool
Add veggie mix in soya chunks
Add little bit of grated coconut (optional)

Your Marinated Soy salad is now ready !!

3. Wednesday – Mushroom Tofu salad

Ingredients :
1 tsp olive oil
1 cup chopped mushrooms
1 cup tofu (soy paneer)
1 cup chopped beans
1 cup chopped carrots
1 cup chopped pumpkin
3/4 cup chopped capsicum
3/4 cup chopped cauliflower
Pink salt and black pepper powder
1 cup chopped tomato
Mixed herbs and dry mint
Mixed roasted seeds and lemon juice
Instructions :Take a heavy based stell pan
Add 1 tsp olive oil
Add 1 cup chopped mushrooms
Add 1 cup tofu
Cook all the ingredients gently for 2 – 3 minutes
Add 1 cup each chopped beans, carrots and pumpkin
Cook the ingredients gently
Add 3/4 cup each capsicum and cauliflower
Add pink salt and black pepper to taste
Mix well, cover the pan and cook for 2 – 3 minutes
Switch off the gas
Add mixed roasted seeds and lemon juice
Add almonds / peanuts as per taste

Your Mushroom Tofu salad is now ready !!

4. Thrusday – Veggie Delight salad

Ingredients :
1/2 cup chopped carrots
1/2 cup chopped pumpkin
1/2 cup chopped capsicum
1 tbsp olive oil
Lemon juice, Some curd
Black pepper, mustard powder, mixed herbs
1 cup chopped pineapple
1 cup chopped cucumber
Pink salt
Instructions :Add 2 tbsp water in pan
Add 1/2 cup each chopped carrots, pumpkin and capsicum
In a separate bowl add 1 tbsp olive oil, lemon juice and some curd(for dressing)
Ass black pepper, mustard powder and mixed herbs
Just pulse and don’t grind
Add 1 cup each chopped pineapple and cucumber
Add cooked veggies
Add dressing
Add pink salt to taste

Your Veggie Delight salad is now ready !!

5. Friday – Vanilla Peanut Fruit salad

Ingredients :
3 tsp grated coconut
3 tbsp orange juice
Pure vanilla extract
1 tsp pure honey
1 tsp peanut butter
1/2 cup cut pineapple
1/2 cup cut grapes
1/2 cup cut water melon
1/2 cup cut orange
Instructions :Take a bowl
Add 3 tsp grated coconut
Add 3 tbsp orange juice
Add pure vanilla extract
Add 1 tsp pure honey
Add 1 tsp peanut butter
Mix well, the dressing is now made
In a bigger bowl, add 1/2 cup cut pineapple, grapes, watermelon and orange
Add the dressing
Mix well

Your Vanilla Peanut Fruit salad is now ready !!

6. Saturday – Daliya salad

Ingredients :
1/2 tsp olive oil
1/2 tsp cumin seeds
1 cup chopped capsicum
1 cup chopped carrot
3 – 4 tbsp cooked kala chana
30 – 40 grams tofu (soya paneer)
Black pepper, herbs and salt
1 cup cooked daliya
1 chopped cucumber
1 chopped tomato
Chilli flakes and 1 tbsp lemon juice
Instructions : Heat 1/2 tsp olive oil
Add 1/2 tsp cumin seeds
Add chopped capsicum and carrots
Slightly cook them
Add 3 – 4 tbsp cooked kala chana
Add 30 – 40 grams tofu
Add black pepper, herbs and salt to taste
Add 1 cup cooked daliya
Cover and cook for 1 – 2 minutes
In a large bowl, add 1 chopped cucumber and 1 chopped tomato
Add chilli flakes and 1 tbsp lemon juice
Add cooked daliya and kala chana mixture to bowl

Your Daliya salad is now ready!!

7. Sunday – Detox salad

Ingredients :
1 cup peeled carrot
1 cup peeled cucumber
1 cup peeled radish
1 cup peeled kakdi
1 cup peeled tomato
1 cup peeled onion
1 cup fermented cabbage
1 tbsp lemon juice
Fresh coriander
Mixed herbs
Instructions :Take a bowl and add 1 cup each peeled carrot, cucumber, radish, kakdi
Add 1 cup each peeled tomato and onion
Add 1 cup fermented cabbage
Add 1 tbsp lemon juice
Add fresh coriander and mixed herbs
Mix well

Your Detox salad is now ready !!
