High Protein Vegan Dinner

This is one of the easiest high protein Dinner recipes you could make! Today I am sharing my quick rice paper noodles recipe. They are very chewy and perfect for absorbing the flavour of any sauce! My whole recipe is super simple to whip up and will take less than 10 minutes to make.
I am also adding some tofu (you can add chickpeas, boiled chana or sprouts) to add a bump of protein to this tasty noodle dish.

Ingredients:

  • Olive oil: 11tsp
  • Tofu: 80gm
  • Mix veggies(boiled): 1 bowl
  • Rice paper sheets: 3-4

Sauce Ingredients:

  • Dark soy sauce: 1.5tsp
  • Sesame seeds: 1 tsp
  • Chilli flakes: 1tsp
  • Oregano/ dried herbs: 1tsp
  • Jaggery: pinch
  • Salt: to taste
  • Water as required

Directions:

Sauce preparation: Add all the ingredients in a cup or bowl and mix well

Soak the rice paper sheets in water and chop/ slice using sharp knife in long noodle shapes

In a pan roast the tofu with olive oil and add the sauce dressing mix well

Then add the boiled mix veggies and rice paper sheet noodles Mix everything together.
