Made with roasted fox nuts (makhana), coconut milk, unsweetened cocoa, peanut butter, and natural sweetness from dates, this creamy, dairy-free ice cream is a gut-friendly, kid-approved, and nutrient-packed treat you’ll love.

Ingredients:
1 cup roasted makhana (fox nuts)
1.5 tbsp unsweetened cocoa powder
100 ml coconut milk
1 Tbsp peanut butter
2-3 soft dates (pitted)
Extra milk as needed
A few dark chocolate chips (optional)
40–50g 70% dark chocolate
Roasted peanuts for topping

Steps:
1. Dry roast 1 cup of makhana till crisp.
2. Grind roasted makhana with cocoa powder into a powder.
Transfer into a bowl
3. In Same blender, blend 100 ml coconut milk, 2 dates, and 1 tbsp peanut butter into a smooth paste.
4. Mix the dry and wet mixtures.
Add extra milk and blend again until smooth and creamy.
5. Stir in a few dark chocolate chips.
6. Transfer the mixture to a container.
7. Pour melted 70% dark chocolate over the top.
8. Sprinkle roasted peanuts as topping.
9. Cover and freeze for 6-8 hours or until set.
10. Scoop and enjoy!
