A natural, Ayurvedic-inspired protein snack that’s easy to make and store!

INGREDIENTS

Ingredients for 20–22 medium bars:

• ¼ cup almonds / Walnuts
• ¾ cup roasted chana dal
• ½ cup pumpkin seeds
• 1 tsp pistachios
• 1 tsp fennel seeds (saunf)
• 1 tsp desi ghee or cold-pressed coconut oil
• ¾ cup jaggery
• 1 tsp cardamom (or cinnamon/vanilla for flavor)
• ¼ tsp baking soda

STEP-BY-STEP RECIPE

Dry roast ¼ cup almonds for 2–3 minutes
Add ¾ cup roasted chana dal
Add ½ cup pumpkin seeds, continue roasting.
Add 1 tsp fennel seeds + 1 tsp ghee and turn off heat.
Transfer to a tray.
Chop the almonds roughly.
Mix in 1 scoop Any Good plant based protein powder
OR you can add 3.5 tbsp sattu flour
Coat the roasted mix evenly.
In the same pan, add 1 tbsp water
Add ¾ cup jaggery and melt on low heat.
Add 1 tsp cardamom
Stir in ¼ tsp baking soda (optional for lightness).
Add Roasted mix into melted jaggery, Stir quickly
Spread onto a ghee-lined thali or parchment paper.
Press flat with the back of a ghee-coated katori.
Let it cool and set for 45 mins to 1 hour at room temperature.
Cut into 20–22 bars.
Store in an airtight container for 4–5 days outside or 2 weeks in the fridge.
