Directions
- Rinse 1 cup of sabudana with water and soak it in enough water to cover the pearls for 2-3 hours or until they become soft and fluffy.
- Drain the excess water from the soaked sabudana and keep it aside.
- Heat 2 tablespoons of oil in a pan and add 1 teaspoon of cumin seeds. Once the cumin seeds start to splutter, add 2 chopped green chilies and sauté for a few seconds.
- Add the soaked sabudana to the pan and stir it for a few minutes on low to medium heat until it becomes translucent.
- Add 1/2 cup of coarsely crushed roasted peanuts, 1/2 teaspoon of salt, and 1/2 teaspoon of sugar to the pan and mix well.
- Add 1 tablespoon of lemon juice to the mixture and stir well.
- Garnish with chopped coriander leaves and grated coconut (optional).
- Serve hot and enjoy!
Note: You can also add potatoes, tomatoes, or other vegetables of your choice to the sabudana khichdi. Just make sure to cook them before adding them to the mixture.
